On the tiny AOC Palette, 4 kilometers away from Aix-en-Provence, stands the myth Château Simone, owned by the Rougier family since 1830. The 23 hectares are planted with clairette, grenache, ugni, muscat for the whites, and for the reds and rosés you will find grenache (red), mourvèdre, syrah and cinsault. The vinification process is made with indigenous yeasts.
Aged for almost two years in oak barrels, the wine show an astonishing aging potential. Very bright, with complex aromas of blackcurrant and some toastiness. Superb tannic structure and great elegance.

Questi sono conservati in cantina, in via Fondaudège, in totale. Le bottiglie più fragili e più rare beneficiano di un riposo in cantina di invecchiamento Liebherr o La Sommelière.
