In Celles-sur-Ource, since the 16th century, the Carreau family has been growing grapes, vinifying a small portion for their personal consumption. In 1990, Lionel Carreau decided to market a champagne brand under his own name. His daughter, Oriane, joined him in 2012.
Oriane's journey has been anything but conventional. A brilliant commercial career took her to North America for several years, yet home ultimately called her back.
While continuing to work for Champagnes Carreau, Oriane is also developing her own brand, Dame de Carreau, using vineyards that are either in organic conversion or already certified. Her goal is clear: exceptional grapes or nothing, with a winemaking approach that involves minimal intervention.

In days gone by Chardonnay and Pinot Blanc grapes were planted together in Celles-sur-Ource without really being differentiated. Consequently, Chardonnay grapes were sometimes mistakenly called Pinot Blancs. So, when a comprehensive study of grapes in the Aube region was published in the year 1900 the term « blancs vrais » was used unofficially to distinguish Pinot Blancs from Chardonnays. The name of this cuvée was chosen as a "tip of the hat" in honour of this rare grape which might be said to be endemic to Celles sur Ource because, out of a total of 90 hectares of Pinot Blancs in the whole of Champagne, 60 of those hectares are in Celles sur Ource.
The nose evokes green apple. On the palate, one is charmed by the freshness with aromas of lemon and candied pineapple. The finish, with subtle notes of pepper and verbena, completes a superb tasting experience. What a wine!

Questi sono conservati in cantina, in via Fondaudège, in totale. Le bottiglie più fragili e più rare beneficiano di un riposo in cantina di invecchiamento Liebherr o La Sommelière.
