Pouilly-Fumé
The Pouilly-Fumé AOC, established in 1937, spans about 1,200 hectares on the right bank of the Loire River, across from Sancerre, in the Nièvre. It produces only dry white wines from sauvignon blanc. Its varied soils — flint, limestone, and clay — give rise to mineral, taut wines with the signature smoky note ("fumé") that inspired the name, also referring to the grape’s grey bloom. Pairings: grilled fish, goat cheese, oysters, roast poultry. Notable producers: Didier Dagueneau, Alexandre Bain, Domaine Masson-Blondelet.
