The Estate

Located in Ardèche, specifically in Mauves, the Pierre Gonon estate is a family-owned vineyard covering 10 hectares that produces exclusively under the AOC Saint-Joseph designation. Brothers Pierre and Jean Gonon have elevated the estate to the pinnacle of the appellation through their uncompromising work in the vineyard. They have been certified organic since 2011. The estate prefers the freshness of the grapes over excessive ripeness. The whites can age for 10 years, if not longer. The reds offer a nuanced interpretation of Syrah, never overly demonstrative.

Vineyard and Grape Varieties: Saint-Joseph Blanc "Les Oliviers" is made primarily from two grape varieties, Marsanne and Roussanne. The vines are planted on granite soils, often in high-altitude parcels, where the terroir and climate contribute freshness and a strong mineral character to the wine.​

Organic Viticulture and Vineyard Care: The Gonon family practices organic viticulture, meticulously tending their vines while minimizing chemical treatments. They use environmentally friendly methods to nurture the soil and vines, ensuring healthy, high-quality grapes.

Hand Harvesting: The grapes are harvested by hand at peak ripeness to ensure a perfect balance between acidity and sweetness. This method also allows for careful selection of the best grapes directly in the vineyard.

    Pressing and Settling:

    • After harvesting, the grapes are gently pressed to extract the juice without applying too much pressure, preserving the delicate aromas of the grape varieties.
    • The juice is then left to settle (débourbage), allowing solid particles to naturally settle at the bottom of the tank for clarification.

    Fermentation and Aging:

    • Fermentation occurs in oak barrels or tanks, using indigenous yeasts to maintain the wine's natural expression of terroir. The Gonons use barrels that have been previously used (not new oak), ensuring that the wine’s flavors are not overpowered by woody notes.

    • The wine is aged on fine lees, with occasional stirring (bâtonnage) to add roundness and volume. This aging process typically lasts 10 to 12 months.

    Bottling: The wine is bottled either without filtration or with minimal filtration, depending on the vintage, to preserve its aromatic complexity and texture. Sulfur is used sparingly, just enough to stabilize the wine.

    The result is an elegant white wine that combines complexity, minerality, and freshness. The Marsanne and Roussanne grape varieties shine in this Saint-Joseph Blanc, delivering aromas of white-fleshed fruits, flowers, and subtle minerality. "Les Oliviers" is a refined wine with excellent aging potential.

    Provenance and storage of our wines

    All wines and other products come directly from the estates or their exclusive distributors. In some cases, rare and hard-to-find bottles have been purchased from private collectors or professionals. Our expertise guarantees the quality and authenticity of the bottles.

    These are stored in the cellar, on Fondaudège Street, in their entirety. The most fragile and rare bottles benefit from aging in a Liebherr or La Sommelière wine cellar.
