The Estate
Domaine Ganevat is an emblem of the Jura vineyard, located in Rotalier, south of Lons-le-Saunier. The Ganevat family has been cultivating vines since the 17th century, but it was Jean-François Ganevat, who returned in 1998 after training in Burgundy with Jean-Marc Morey, who brought the estate to its current level of renown. With deep respect for tradition and native grape varieties, he began converting to biodynamic farming in the early 2000s, breaking away from oenological additives in favor of natural methods.
The estate spans approximately 13 hectares, divided into around forty micro-parcels nestled on blue and grey marl and schist soils in the southern Revermont. This patchwork of terroirs, combined with demanding manual viticulture, allows for a precise expression of Jura varieties such as Savagnin, Trousseau, Poulsard, Chardonnay, and the rare Enfariné. Each cuvée offers a faithful and singular interpretation of its place of origin.
Today, Jean-François Ganevat, supported by his sister Anne, continues to craft vibrant, refined, and deeply complex wines that captivate enthusiasts and sommeliers worldwide. The domaine also produces wines under the “Anne & Jean-François Ganevat” label, a haute-couture négociant range made from grapes sourced from like-minded growers, always vinified with the same artisanal precision. Their uncompromising approach — native yeasts, minimal or no sulfur, long élevage — has earned them a place among the most respected producers in Jura and beyond.
The Wine
"Le Chamois du Paradis" comes from old Chardonnay vines planted at high density on grey marl and schist soils in the southern Jura, in hillside plots around Rotalier. The vineyard is fully certified biodynamic, with extreme care given to each vine: manual work, very low yields, light plowing, herbal teas, and gentle treatments (sulfur, copper, horsetail, nettle). The goal is to preserve soil balance and grape vitality through a non-interventionist yet highly exacting philosophy.
Tasting
Intense and pure nose of ripe white fruits, alpine flowers, and subtle smoky notes. The palate is sleek and linear, with a mineral tension that reflects the grey marl terroir. Long, saline finish with vibrant energy and elegant precision.
