The Estate
Nivers is the story of a bold and human adventure led by two passionate gastronomes: Manon and Nicolas.
Beyond expertise, it is a mission that brought them together—the mission of offering new tasting experiences during meals.
The adventure began in 2021 when Nicolas, a lover of fine bottles and an experienced taster, noticed that the alcohol-free experience at the table was disappointing. He decided to step away from wine, which he deeply appreciates, to create three uniquely charactered plant-based signatures in 2023.
Manon was immediately captivated. A true epicurean at heart, she believes in unexpected and delicious pairings between dishes and Nivers. She decided to join Nicolas and wholeheartedly embrace this new era of tasting!
The Wine
Chinese white teas grands crus, verjus, kombucha culture, plant extractions (bitter orange tree), cedrat, bergamot.
Tea area: Fujian Mountain, China
Tasting
Roundness of white flowers (jasmine), balanced with citrus notes (bergamot, cedrat) bringing a beautiful acidity in the middle of the palate.
Flattering profile, floral persistence at the end of the tasting.
Possible pairings:
Saint-Jacques carpaccio with passion yuzu sauce, roasted apricot crumble, wild strawberry.
Serve between 12°C and 14°C in a wine glass
Store at room temperature or in a cellar before opening, refrigerate after opening, and consume within 10 days.
