Côteaux-du-Layon
The Coteaux du Layon AOC, established in 1950, spans about 1,400 hectares south of Angers, along the Layon River. It produces only sweet to luscious white wines from chenin blanc, often harvested late or affected by noble rot. Schist soils and a mild climate favor sugar concentration while preserving acidity. These wines are rich yet vibrant, with notes of candied fruits, honey, and gentle spices. Pairings: foie gras, blue cheeses, sweet-and-sour Asian dishes, stone fruit tarts.
