Saint-Emilion
The Saint-Émilion AOC, established in 1936, spans about 5,400 hectares on the right bank of the Dordogne. It is renowned for its red wines made primarily from merlot, with cabernet franc and cabernet sauvignon. The soils—ranging from clay-limestone to gravel and sand—contribute to the wines’ complexity, richness, and elegance. The appellation is home to iconic estates such as Château Cheval Blanc, Château Angélus, and Château Ausone. These wines pair wonderfully with slow-cooked dishes, roasted poultry, grilled vegetables, and mushroom risottos.
