Sancerre
The Sancerre AOC, established in 1936, spans about 2,900 hectares on the left bank of the Loire River, in the Cher department. It mainly produces dry white wines from sauvignon blanc, along with reds and rosés from pinot noir. Soils vary greatly — from limestone-rich "terres blanches" and "caillottes" to flint — resulting in a wide range of styles, from floral and crisp to smoky and mineral. Sancerre is known for its precise, vibrant whites. Pairings: Crottin de Chavignol, ceviche, asparagus, grilled white meats. Notable producers: Alphonse Mellot, François Cotat, Domaine Vacheron.
