Crémant de Bourgogne
The Crémant de Bourgogne AOC, established in 1975, covers about 2,500 hectares across the Burgundy region, from Chablis to Mâcon. Made using the traditional method, it comes in white and rosé styles, primarily from pinot noir, chardonnay, gamay, and aligoté. Limestone soils and a cool climate give finesse, tension, and fine bubbles. Fun fact: though less famous than Champagne, some Crémants de Bourgogne can rival prestigious sparkling wines in quality. Pairings: aperitifs, vegetable tempura, fresh cheeses, fruity desserts.
