Hautes-Côtes de Beaune
The Hautes-Côtes de Beaune AOC, recognized in 1961, covers around 900 hectares west of the Côte de Beaune, at a higher altitude. It produces red wines from pinot noir that are light, fresh, and fruity, as well as white wines from chardonnay that are often crisp and floral. The cooler climate and limestone soils give the wines great tension. Fun fact: this appellation has improved significantly in quality in recent years due to better viticulture and climate change. Pairings: roasted poultry, grilled vegetables, soft cheeses.
