Thomas Pico spent his entire childhood in a small village in the Chablis region, Courgis. Surrounded by a father and grandfather who were winemakers, he quickly inherited a passion for the profession. He naturally chose to pursue a BTS in viticulture and oenology in Beaune. His passion for winemaking, his curiosity, and his desire to respect the environment and the health of his loved ones were determining factors in his decision. The organic cultivation of his vines became an obvious choice. Returning to the family estate of Bois d'Yver in 2004, he took over 8 hectares, which he converted to organic farming (ECOCERT). He thus created his own estate, Domaine "Pattes Loup".
In 2009, the whole production becomes certified.
The Chablis 1er Cru Beauregard offers aromas of lemon, green apple, and minerals. On the palate, it is lively, elegant, and well-balanced, with a long finish and a beautiful mineral freshness typical of Chablis.

Provenance and storage of our wines
All wines and other products come directly from the estates or their exclusive distributors. In some cases, rare and hard-to-find bottles have been purchased from private collectors or professionals. Our expertise guarantees the quality and authenticity of the bottles.
These are stored in the cellar, on Fondaudège Street, in their entirety. The most fragile and rare bottles benefit from aging in a Liebherr or La Sommelière wine cellar.
