The Producer
Founded in 2001 by David Pamiès and his wife Danielle Khalkhal, the Domaine Lauraire des Lys is a family-owned estate located in La Caunette, in the Minervois. In 2019, their son Loris joined the estate to take charge of the winemaking, before officially taking over the management in 2025, thus continuing the family adventure.
The vineyard extends over approximately 15 to 20 hectares, according to sources, on the foothills of the Montagne Noire, within the limestone plateau of Vialanove. The rocky soils, limestone scree, and the cooler, windier climate than in other Mediterranean areas favor wines that combine concentration, freshness, and aromatic expression. Syrah, Grenache, Carignan, and Cinsault make up the reds, while Grenache Gris and Rolle are used for the whites.
Certified organic since 2011, the estate prioritizes manual harvesting, a rigorous sorting of grapes, and gentle winemaking to preserve the expression of the fruit and the terroir. Its range includes red, rosé, and white Minervois wines, with cuvées like Kalys, Loriza, and Code 255, which illustrate a style combining Mediterranean generosity, freshness, and finesse.
The Wine
Hills in the garrigue ecosystem of the Vialanove causse. Limit production area. Limestone, stony soils. Hot and dry climate, cold in winter, with persistent winds.
Organic farming, treatments with contact products. Short pruning, during the waning moon for Grenaches. Temporary natural cover crops. Organic fertilizer and compost, mechanical soil work. Manual suckering and bud thinning, respecting the foliage. Manual harvesting in small crates with sorting in the vineyard and at the cellar.
Tasting
Purple robe, aromas of cocoa and licorice, beautiful sweetness, freshness, notes of cherry and blackcurrant, hints of garrigue and a lot of elegance.
It will be a hit on a table where marinated beef skewers, grilled vegetables, and potato dauphines can be found.
