In the 16th century, Isle Fort stood along the route to Saint-Jacques-de-Compostelle. A stronghold of the Knights of the Order of Malta, the estate was already being cultivated for its exceptional resources: its clay supplied a royal faience factory, its stone quarries contributed to the construction of Bordeaux, its water was used for fish farming, and its land for viticulture.
The lords of Isle Fort—close to the Crown, musketeers, knights, the King’s first advisor, and even a confidant of Henry IV, who frequently stayed at the château—ruled the estate until the mid-19th century. They developed an agroforestry method across the estate’s lands, farms, mills, orchards, and vineyards, a practice that influenced the entire region and whose remnants can still be seen today.
At the end of the 19th century, the phylloxera crisis led to the cessation of the estate’s activities, plunging it into a deep slumber. Abandoned for decades, the soils retained their integrity. The flourishing flora and fauna allowed the estate to reclaim its original biodiversity.
In 2001, Sylvie Douce and architect François Jeantet, founders of the Salon du Chocolat, took over Isle Fort and, along with their children, restored the estate. They replanted 9 hectares of vines, rebuilt the old farmhouses, reestablished the lakes and waterfalls, and introduced horses, cows, sheep, pigs, and various birds—even bats in the caves, ensuring natural pest control for the vines.
The soil composition and its preserved environment create an exceptional terroir. A gravel plateau and south-facing clay-limestone slopes form the vineyard, where the power of Merlot meets the elegance of Cabernets. The average vine age is 20 years, with plantings distributed as 58% Merlot, 28% Cabernet Franc, and 14% Cabernet Sauvignon. Every viticultural practice follows a reasoned approach to phytosanitary management. The wine is aged in barrels for 12 to 14 months. With a density of 6,500 vines per hectare and controlled yields, the grapes fully express their aromatic complexity.
The cultivation of the land and its fruit is carried out by passionate individuals, dedicated to the duties of winemaking. Every step leading to bottling, from harvest to aging in barrels, is guided by a deep respect for the terroir and its purest expression.
In-depth knowledge of the reactivity of the vineyard made it possible to select around 2 hectares made up of each of the 3 grape varieties, taking into account the consistency of their maturity and the relevance of their blending.
The lessons learned from this highly-followed vinification allow the beneficial results to be applied the whole Isle Fort vineyard.
The desire to preserve this surrounding biodiversity and to be in symbiosis with it has led to a plot-based vinification method, in harmony with the existing flora and fauna.
The root system is brought to feed in depth to extract its original expression and its naturalness in all its safeguarded integrity from the soil.
TASTING :
The Cuvée Précieuse of Isle Fort is a wine structured from aromatic riches that its terroir naturally transmits to it. The right plant expression of soils in the fullness of their aromas.
Vinification Techniques:
- Alcoholic fermentation in concrete vats
Fermentation time: 21 to 28 days
Malolactic fermentation in partial barrels - Particularity of vinification and/or aging: manual sorting table and vat by gravitation seed by seed then vinification in whole grain; crushing with alternation of small fractioned winding works with manual watering of the grounds; use of a pneumatic press with selection of press wines; aging in separate lots until final assembly.

Provenance and storage of our wines
All wines and other products come directly from the estates or their exclusive distributors. In some cases, rare and hard-to-find bottles have been purchased from private collectors or professionals. Our expertise guarantees the quality and authenticity of the bottles.
These are stored in the cellar, on Fondaudège Street, in their entirety. The most fragile and rare bottles benefit from aging in a Liebherr or La Sommelière wine cellar.
