The Estate
Founded in 1946 in Chavot-Courcourt, just south of Épernay, Champagne Chavost was born from the desire of a group of twenty winegrowers to share their expertise. In 2019, the arrival of oenologist Fabian Daviaux marked a decisive turning point: the estate shifted toward organic viticulture and natural winemaking, breaking away from Champagne’s traditional methods. This sincere and committed approach aims to express the purity of the grape and the true identity of the terroir, without artifice.
The vineyard lies on the southern slopes of Épernay, at the crossroads of the Côte des Blancs and the Vallée de la Marne. This privileged location offers a rich diversity of soils—clay-limestone, chalk, and sand—that give the wines both tension and depth. The main grape varieties—Chardonnay, Pinot Meunier, and Pinot Noir—thrive in this environment, enhanced by sustainable viticulture that respects soil life and natural rhythms.
Today, Champagne Chavost stands out as a benchmark among artisanal and environmentally conscious Champagne producers. Its cuvées, crafted without added sulfites, dosage, or filtration, reflect a quest for authenticity and transparency. These are living, expressive champagnes where the energy of the fruit takes precedence over technique—a rare and daring signature that captivates lovers of characterful wines.

Vinification: Champagne 100% Grape 0% Additive
Natural alcoholic fermentation and sparkling formation with indigenous grape yeasts, without the addition of sulfites or anything else. No added sugar during its production. This wine has not been cold stabilized, nor fined or filtered; its slight cloudiness does not alter its tasting qualities in any way.
Blend: 50% Chardonnay, 50% Meunier, all in 100% Cuvée (First Press of the Press)
Dosage: 0 g/L of sugar added at disgorgement

The Eurêka cuvée from Champagne Chavost impresses with its radiant purity and vibrant energy, carried by a fine bubble and a crystalline texture.
