A Cognac shaped by the terroir and the know-how
The production of the Cognac Paul Monier is based on precise work in the vineyard and distillation, with particular attention paid to the origin of the brandies and their aging. The estate relies notably on the characteristics of the Fins Bois, a renowned cru for producing smooth, fruity, and generous Cognacs, while working on blends that allow for greater depth and complexity with aging. The eaux-de-vie gradually take on their personality through contact with oak, developing over the years fruity, spicy, woody, and pastry notes. Tasting
Its deep golden hue announces a Cognac that is both elegant and generous. The nose reveals an intense aromatic palette, where delicate notes of ripe fruits and dried fruits mingle. On the palate, the balance between finesse and power reveals flavors of hazelnut, plum, fig, and toasted bread, carried by a beautiful roundness. Its long aging in French oak barrels gives it a harmonious, persistent, and refined finish.
