During his many travels in Northern Europe, Bertrand noticed as early as 2016 the emergence of non-alcoholic creations prepared on-site in gourmet restaurants, particularly in Denmark, Great Britain, Germany, and Austria.
These exciting discoveries inspire him to go further and experiment with a multitude of recipes himself.
Bertrand completely unleashes his creativity. Mariela is used to building complex blends from multiple elements, different grape varieties, and different origins.
The highly complementary duo works wonderfully and tests over 150 natural and organic ingredients (aromatic plants, fruits, spices, roots, herbs, teas, hydrosols, spring waters, purified, micro-filtered waters...). They build trusting relationships with organic fruit and aromatic plant producers in Ardèche and Drôme.
