Vézelay

The Vézelay AOC, granted in 2017, covers about 70 hectares around the historic village of Vézelay, in the Yonne. It produces only white wines from chardonnay — dry, crisp, and mineral-driven, with notes of citrus, white flowers, and sometimes a saline touch. Clay-limestone soils and a cool climate give the wines great freshness. Fun fact: the region’s vineyards were wiped out by phylloxera and only revived in the 1970s by a few passionate growers. Pairings: seafood, steamed fish, goat cheeses.
