The Producer
Former technical director of the Louis Latour house, Boris Champy founded his estate in the early 2010s with a clear ambition: to express Burgundy through high-altitude wines that are precise and deeply alive. Based in Nantoux, in the Hautes-Côtes de Beaune, he quickly established himself among the most committed winemakers of his generation. From the beginning, the estate has been run biodynamically, a strong choice that guides all of his work in the vineyard as well as in the cellar.
The estate is distinguished by its plots located between 380 and 500 meters in altitude, on limestone soils mixed with marl and clay. This unique situation gives the grapes a slow maturity, natural freshness, and great tension. The vines, mostly planted with Pinot Noir and Chardonnay, benefit from a cooler microclimate than the Côte de Beaune, providing aromatic finesse and balance to the wines.
Today, the Boris Champy estate is recognized for the purity and energy of its cuvées, sought after by both discerning enthusiasts and fine dining establishments. The vinifications are minimally interventionist, favoring natural fermentations and precise aging. The wines express a contemporary, elegant, and sincere Burgundy, where freshness, drinkability, and depth take precedence over demonstration.
The Wine
VINE MANAGEMENT
Traditional low vines, 10,000 plants/ha, Guyot pruning
VINIFICATION AND AGING
Manual harvesting at optimal ripeness. Very low yields.
Vinification: start of maceration in carbonic fermentation, gentle extraction, with 50% whole grapes, in wooden vats.
Aging: 12 months on average with a mix of old barrels and tank.
Tasting
Fruity bouquet where green pepper, spices, and aromatic herbs combine. Very smooth palate with a nice structure and wonderfully integrated tannins.
