The Producer
Founded in 1946 in Chavot-Courcourt, south of Épernay, Champagne Chavost was born from the desire of about twenty winemakers to pool their expertise. In 2019, the arrival of winemaker Fabian Daviaux marked a decisive turning point: the estate shifted towards organic viticulture and winemaking without additives, breaking with the traditional codes of Champagne. This sincere and committed approach aims to express the purity of the grape and the identity of the terroir, without artifice.
The vineyard extends over the southern slopes of Épernay, at the crossroads of the Côte des Blancs and the Vallée de la Marne. This privileged geographical position offers a great diversity of soils: clay-limestone, chalky, and sandy, which give the wines both tension, depth, and aromatic precision. The main grape varieties – Chardonnay, Pinot Meunier, and Pinot Noir – find a natural balance here, enhanced by a viticulture that respects the life of the soil and natural cycles.
Today, Champagne Chavost stands out as a reference among artisanal and committed Champagne houses. Its cuvées, crafted without the addition of sulfites, without dosage, and without filtration, reflect a quest for authenticity and transparency. Lively, sincere, and expressive champagnes, where the energy of the fruit takes precedence over technique: a rare and bold signature that appeals to lovers of characterful wines.

Terroir: Clay-Limestone North Exposure
Harvest: Manual at optimal ripeness
Vinification: 50% in barrels and in 4,000-liter casks, 50% in temperature-controlled stainless steel, all without added sulfites.

Tasting
Nose: Powerful with aromas of bakery and pastry, ripe pear, very refreshing.
Palate: Very delicate on the sweetness, then more structured and rich on the finish with light notes of bitterness at the end.
