The Producer
Domaine Vincent Dauvissat is one of the oldest and most respected in Chablis. Founded in the early 20th century by Robert Dauvissat, it experienced significant growth under the leadership of his grandson, Vincent, who joined the estate in the 1970s. True to an artisanal philosophy, the Dauvissat family has always prioritized discretion and rigor over chasing trends. Over the decades, the estate has built a reputation for excellence, largely due to its ability to express the authenticity of Chablis Chardonnay with remarkable consistency.
The estate covers about ten hectares, exclusively located on the limestone slopes of the Kimmeridgian, typical of Chablis. These soils, rich in marine fossils, give the wines their distinctive mineral signature. Soil work is done carefully, without chemical herbicides, and yields are strictly controlled. The most emblematic plots of the estate include the Premier CrusLa ForestandVaillons, as well as the Grand CruLes Clos, all vinified with the same respect for the terroir and great precision.
Today, Vincent Dauvissat continues his work with the same artisanal rigor, supported by his son Ghislain who is preparing to take over. The wines of the estate continue to be aged in old barrels, with natural fermentations and long aging. No concessions are made to superficial modernity: each vintage reflects the climate of the year and the personality of the place. The bottles, rare and sought after, have become absolute references in the world of great white wines for aging.
The Wine
Tasting
Dauvissat's La Forest 1er Cru opens with a subtle nose of candied lemon, white flowers, and oyster shell. On the palate, the texture is ample, tightened by a saline framework and a chiseled acidity that extends the finish. A wine that is both energetic and deep, promising great evolution in the cellar.
