Cahors
The Cahors AOC, established in 1971, covers about 3,500 hectares in southwestern France. It mainly produces red wines from malbec grapes (locally called “cot”), known for their power, tannic structure, and aging potential. The soils vary, including limestone, clay, and gravel. Pairings: meat stews, cassoulet, aged cheeses, southwestern French cuisine. Notable producers: Château du Cèdre, Clos Triguedina.
