The Estate
In the beginning, there is the vineyard of Julien Baudoin's maternal grandfather in Bourdet in the south of Deux-Sèvres. The grape harvest every year is an unmissable event at the start of the school year throughout his youth. These few dozen ares of hybrid vines each year allow for filling his grandfather's fiber tanks for his annual consumption and a few demijohns for the traditional pineau.
Julien settled without vineyards not far from Bayonne, which is why he buys organic grapes from trusted winemakers in Gers and Gironde. Following this, he strives to vinify their grapes in the gentlest way possible and with the least amount of chemical inputs. The vinification, aging, and bottling are carried out by him in Lahonce.
The Wine
Red 100% Cabernet Sauvignon, from beautiful ripe grapes.
A gentle maceration for a few days and a light pressing with the old mechanical press brought back from the Poitevin marshes.
Tasting
This cabernet sauvignon, full of ripe fruits (plum, blueberry), almost takes us to the slopes of Côte (or Malbec). Smooth and easy to drink, it is nonetheless serious and will pair very well with beautiful tapas from the Basque Country or a lovely platter of Lyonnaise charcuterie.
