The Producer
Domaine Giraudon is a family-owned vineyard located in the typically Burgundian village of Chitry-le-Fort, a few kilometers southwest of Chablis, in the heart of the great Auxerrois region. The Giraudon family has been cultivating vines on these slopes for several generations, with Marcel Giraudon and now his children, Aurélie and Thibaut, who have taken over the reins of the family estate. Historically, the Chitry vineyard suffered from phylloxera and the major upheavals of the 20th century, but it has managed to endure and obtained the right in 1993 to identify its wines under the Bourgogne Chitry appellation. Today, the estate embodies this winemaking tradition rooted in local history, while continuing an artisanal winemaking process focused on expressing the terroir.
Today, the estate is managed with respect for sustainable practices, including manual harvesting, controlled soil work, and an EcoPhyto approach for vine protection. Traditional vinification in stainless steel tanks (without wood for the majority of the wines) helps preserve the aromatic purity and expression of the vintage, with careful control of fermentation temperatures. The wines produced reflect the freshness, finesse, and minerality of the Chitry terroir, whether in the Bourgogne Aligoté, the Bourgogne Chitry whites or reds, as well as in some rarer cuvées like Crémant de Bourgogne or a small volume of Chablis. Aurélie focuses on vinification while Thibaut oversees the vines, thus perpetuating the family know-how in a domain deeply rooted in Burgundian tradition.

Tasting
The wine reveals a bright pale yellow color, with aromas of green apple, lemon, and a subtle floral note. On the palate, the wine combines freshness and minerality, with a beautiful tension and a clean, saline finish that emphasizes the terroir.
