Palette
The Palette AOC, one of the smallest appellations in Provence, covers about 50 hectares around the village of Palette, near Aix-en-Provence. Established in 1948, it produces elegant red, rosé, and white wines, mainly from mourvèdre, grenache, cinsault, rolle, and clairette. The clay-limestone and marl soils give the wines complexity and aging potential. Pairings: refined Provençal dishes, game, sauced fish, aged cheeses. Notable producers: Château Simone, Château Crémade.
