Sauternes-Barsac
The Sauternes and Barsac AOCs, created in 1936, cover around 2,000 hectares in southern Bordeaux. These regions produce exceptional sweet wines from sémillon, sauvignon blanc, and muscadelle, affected by noble rot (Botrytis cinerea). The gravel and clay-limestone soils, along with the misty microclimate, encourage this rare phenomenon. Barsac may also label its wines under the Sauternes AOC, but tends to produce fresher styles. Renowned estates include Château d’Yquem, Château Climens, and Château Coutet. These wines pair beautifully with foie gras, sweet-and-savory dishes, mild curries, or blue cheeses.
