The Producer
Cantina Fiorentino was born in 2014 in Galatina, in the heart of Salento, under the impetus of Pierantonio Fiorentino, an entrepreneur engaged in renewable energies and biosustainability. The project is part of the continuity of a local wine heritage, particularly through the integration of the historic Cantina Valle dell'Asso. The acquisition of its historic building, dating back to 1920, has allowed the estate to significantly develop its vineyard and to combine wine tradition with environmental innovation.
The estate is located in Salento, in the south of Puglia, between the rocky landscapes of the Adriatic and the sandier expanses of the Ionian Sea. It now extends over 100 hectares of certified organic vineyards, spread across three large territories. Cantina Fiorentino honors several emblematic indigenous grape varieties of the region, including Negroamaro, Primitivo, Verdeca, and Malvasia, along with other traditional varieties from Salento, depending on the different properties and cuvées.
Today, Cantina Fiorentino bases its identity on three principles: tradition, sustainability, and innovation. The entire vineyard is managed organically, and the estate seeks to minimize its environmental impact, particularly through facilities with very low energy consumption powered by renewable sources. The range is divided into several collections, including Valle dell’Asso, Galatea, and Madreterra, with white, red, rosé, sparkling, and sweet wines that reflect the diversity of Salento while affirming a contemporary and sustainable approach to viticulture.
The Wine
Aging– 12 months in stainless steel tank – 12/18 months in large oak barrel
Tasting
Le Piromàfo is 100% Negroamaro. Produced only in the best years, it is harvested after the grapes have overripe on the vine. This process allows for a wine with a better organoleptic expression of the grape variety's characteristics.
It is a ruby red wine that, if aged, tends towards garnet.
The aroma is complex: tobacco, leather, coffee, and licorice. On the palate, it is soft and well-structured, supported by the tannins from barrel aging.
