Saint-Bris

The Saint-Bris AOC, officially recognized in 2003, covers around 130 hectares near Chablis, in northern Burgundy. It is the only Burgundy appellation allowed to produce white wines from sauvignon blanc (and sauvignon gris), resulting in fresh, zesty, and aromatic wines with notes of citrus, boxwood, and tropical fruit. Its kimmeridgian soils and cool climate are reminiscent of the Loire. Pairings: grilled fish, fresh goat cheese, asparagus, Thai dishes.
