Chablis
The Chablis AOC, established in 1938, is part of a larger 5,800-hectare vineyard area in northern Burgundy’s Yonne department, which includes Petit Chablis, Chablis, Chablis Premier Cru, and Chablis Grand Cru. Made exclusively from chardonnay, the wines grow on Kimmeridgian soils rich in marine fossils, giving them a distinctive minerality. The style is taut, dry, and crystalline, with citrus, chalk, and oyster shell notes. Fun fact: Chablis owes much of its early prestige to the Cistercian monks of Pontigny in the 12th century. Perfect pairings include oysters, sashimi, fresh goat cheese, or creamy poultry. Notable producers: François Raveneau, Vincent Dauvissat, Domaine William Fèvre.
