Bourgogne Chitry
The Bourgogne Chitry AOC, established in 1970, covers about 70 hectares around the village of Chitry in the Yonne, near Chablis. Its Kimmeridgian clay-limestone soils resemble those of Chablis grands crus. The appellation produces crisp, mineral-driven white wines from chardonnay and light, fruity reds from pinot noir. Less publicized, Chitry is appreciated by connoisseurs for its great value. The whites pair well with seafood, escargots, or goat cheese, while the reds match nicely with fine charcuterie or roasted poultry.
