Champagne
The Champagne AOC, established in 1936, spans around 34,000 hectares across five main areas (Montagne de Reims, Vallée de la Marne, Côte des Blancs, Côte des Bar, Côte de Sézanne). It produces exclusively sparkling wines using pinot noir, meunier, and chardonnay, following the traditional method. Chalky soils and a cool climate create wines with precision, elegance, and complexity. Pairings: oysters, sashimi, aged parmesan, creamy poultry, light desserts.
