Jura

The Jura wine region, with multiple AOCs (Arbois, Château-Chalon, L'Étoile, Côtes du Jura, Macvin, Crémant du Jura), spans about 2,000 hectares. It features native grape varieties like savagnin, trousseau, and poulsard, alongside chardonnay and pinot noir. Clay-limestone soils and a continental climate produce distinctive wines: oxidative whites (like vin jaune), delicate reds, precise crémants, and rich vin de paille. Pairings: aged Comté, chicken with morels, vegetarian curry, game birds. Notable producers: Domaine Overnoy, Domaine Ganevat, Domaine Macle.
