Bourgogne Chitry

The Bourgogne Chitry AOC, recognized in 1993, covers around 70 hectares near Chablis, in the Yonne. It produces crisp, mineral white wines from chardonnay, fruity and supple reds from pinot noir, and fresh rosés from césar and pinot noir. Kimmeridgian limestone soils give tension and elegance. Pairings: Burgundy snails, river fish, light charcuterie. Notable producers: Domaine Olivier Morin, Domaine Colbois.
